Duck…Duck…Goose

First time I went to Amelia’s, owner of Hidden Fortress, I wasn’t sure what to expect!  I’d heard she had chickens and was a famous micro brewer and that we were going there to make some cider!

What impressed me the most, since I’m not a cider drinker, were all the different kinds of chickens and roosters that were happily clucking away in their castle like coop! From then on I became a believer that happy chickens make happy eggs.

Well this past weekend I got to know that Amelia has added geese to her happy family and Kevin brought me some goose eggs to prove it! The egg shells are super strong and need a good whack to crack them open as Kevin found out while making his Sunday morning omlette!   Look at these beauties!!  The middle photo shows the difference between a chicken’s egg and a goose’s egg.

  1. I love love love goose eggs they are so pretty to look at and when fresh from farm like yours are the best tasting thing! Given that I love all things goose their eggs are no exception! You are quite lucky to get your hands on them! Enjoy them for me!

  2. Do goose eggs taste somewhat different from chickens’ eggs? Is there a difference in the way they respond to cooking? Any tips or tricks we should know about, Ivy?

  3. I had one for my breakfast on Sunday, Robin. I would be hard pressed to pick out the goose egg in a blindfold test. It was, perhaps, a little creamier?

    Cooking it was tricky. I had to do it _easy over_ instead of my usual _sunny side up_ because the white was so thick and I couldn’t get it to cook. Ironically, I only fried it so that I could get a photo; I usually have my eggs scrambled or make an omelette.

    It also took 5 whacks and a lot of sawing to get the thing open in the first place.

    A really neat thing to do with goose eggs is drill a small hole in each end and then blow the egg out. Resulting in a beautiful empty shell that you can decorate.

    The other night we made deviled goose eggs.. what an awesome idea! The white are so rich tasting I cannot describe it properly, except to say, delicious. And the size is impressive.

    Gently hard boiled goose eggs are a good way to cook them. Place in pan covered with water. Bring to a boil. Turn heat off and let rest for 20 minutes, then cool in cold water bath.

    Amelia, my mum was telling me I should try that too…blowing out the egg and decorate the shell. Apparently my uncle Alex, when he was little so this would be during the war probably, would do that! He would go out in the chicken coop, take an egg and suck the egg out and eat it fresh (can’t get fresher than that) and then he would place the egg shell where he found it and walk away thinking nobody knew what he was doing! That was just one of the naughty things he did 🙂 One day maybe I should write a book about him…would probably make a good Hollywood movie too 🙂
